Bodyrock challenge

Hello to everyone, and Happy New Year!

I spent New Year’s at Mattia’s house, but now I’m back in Milan getting ready for an exam session.

And Getting back on the study track reminded my I should also get back on the fitness track, and abandon the chocolate track; our house is invaded in sweets and chocolate, you see: of the 772 chocolates my sister and I made, quite a few weren’t used for presents and, well, found a home in my stomach :D. Then we had some of this

And Breakfast was more similar to desert than a normal breakfast…here’s a hint:

Ad to all these sweets the cold air that doesn’t quite invite you out for a run…and you’ve got a recipe for perfect laziness 😉

So when I saw on itty bits of balance that Bodyrock was making a 30-day challenge, I jumped at the opportunity to workout without having to go out in the cold.

And since I have some sort of mental problem for which if I tell myself I’ll do something, I’ll most probably end up disobeying my own orders just to prove I can…

I’m not joking, I really do that 😀

Anyways, there’s a higher probability I’ll do this challenge if I tell someone else, so here I am!!

Today I started with the fit test, and here are my results:

50/10 interval workout

Squat jumps: 30

Push ups (girl style): 18

Burpees: 14

High knees: 53 for each leg

Switch lunges: 21 on each side

Tuck jumps: 13

Straight Abs: 18

I didn’t think I would be, but I was exhausted after all of that, much more tired that I usually am after my normal run. Which probably says a lot about me not pushing my runs to my limits 😀

I’m kind of excited though, and can’t wait to see what’s next!!

Northern Lights

Always be sure to be wide awake when making something a bit more complex for breakfast; otherwise you might end up putting one ingredient instead of another one.

And even though they’re similar, always remember that baking soda and baking powder are different, and can’t always be interchangeable.

So next time you make Katie’s pancakes, be sure not to put baking soda instead of baking powder, otherwise you’ll be left with a bitter tasting pancakes that does not satisfy one bit your pancake craving.

And no, I most certainly did not do this this morning, why would you think such a thing? 😀

On a Happier note, I have finally booked Mattia’s and mine vacation to Tromso , Norway in March in search of the…Northern Lights!

This is something We’ve always wanted to do, and I decided it would be a good present for Mattia! And yes, he knows, it was a bit too big a present not to tell him 🙂

Now I’m off to catch a train that will take me to Mattia’s for then weekend! Luckily this month’s National Geographic showed up in the mail yesterday so I’ll have some reading material!

ACE Muffins

ACE muffins: a.k.a., muffins made with juice that has vitamin A, C, and E!

I based these muffins off a popular plum-cake here in Italy:

 They are called “Camille” and feature in the ingredients carrots, almonds and orange juice. I’m not the biggest fan, I like them but am happy even without them.

The other day I was thinking of what to make and Mattia suggested (or so he says, I don’t quite remember ;)) I make them; he’s a much bigger fan than I am!

So I searched for a few recipes and found out they are super easy to make!

The original recipe calls only for carrots and orange, but I thought adding a bit of lemon juice coud only improve them, and turn them from Camille to ACE muffins.

ACE Muffins

makes aprox. 15 muffins

1 flax egg (1 tbsp ground flaxseed + 3 tbsp water)

1 cup whole wheat flour

3/4 cup brown sugar

1 tsp baking soda

1/4 tsp salt

heaping 1/3 cup almonds

2 carrots,grated ( 1 cup aprox.)

zest of one orange

juice of 1 orange + 1 lemon + 1/4 cup carrot juice

1/2 tsp vanilla extract

2 tbsp sunflower oil

Preheat oven to 350 F.

In a bowl mix the flax egg and let rest for 5-10 minutes. Grind almonds in food processor.

In another bowl combine flour, sugar, salt, ground almonds and baking soda.

Add to the flax egg the juice, grated carrots, orange zest, vanilla and oil. Add the dry to the wet and combine well, but don’t over mix. Fill muffin pan with the mixture to 3/4 of the height, and cook for 15-17 minutes.

I might not be a fan of the real deal, but I most certainly do like these!

Chocolate Spread

Nutella has nothing on me.

You wanna know why? because my chocolate spread is easy to make, and has only 2 ingredients: hazelnuts and chocolate.

Okay, technically it has more than two, because chocolate is make of cocoa paste, cocoa butter and etcetera, but we’ll simplify and say chocolate is one ingredient 😉

My chocolate spread has no sugar, no added soy, no milk. Just pure chocolate and hazelnut goodness.

Chocolate Spread

145 g (5.1 oz) bittersweet chocolate

2 cups hazelnuts

Melt the chocolate. Meanwhile with a food processor process the nuts for 5-10 minutes until you obtain a nut butter, stopping every now and then to scrape down the edges. Combine and mix well!

Voilà, done! serve on toast, pancakes, oatmeal…I’m salivating just thinking about it! Guess what this gal is having for breakfast 😉

Hey guys! It’s already Wednesday, yay! I feel like this week is gong by so fast! I wanted to write a post last night and tell you about my doctor’s visit for my back but was too tired and decided I would tell you about it today. My doctor told me it’s probably just an inflamed ligament and there is absolutely no reason for me to be lazy 🙂 I should do whatever I want, just avoid the kind of exercise that hurt. She told me to treat it with some anti-inflammatory and I should be fine!

So after another week-long hiatus from ballet, last night I went; I must say, after a few exercises that required a lot of jumping my back did hurt a bit, so once I came home I iced it and then put some arnica cream on it.

But lets get to the main topic about this post…food!

Breakfast was chocolate chip pancakes with peanut butter and apricot jam, served sandwich style plus a glass of oj. This is the kind of breakfast you need before tackling an hour long walk with the dog in the cold park!

Lunch came together in a flash because I was starving: I grilled some eggplant and made little sandwiches with hummus and a sun-dried tomatoes sauce on top ( I love this sauce!) plus a small leftover of pizzoccheri, which is a typical italian dish from Valtellina and consist of buckwheat pasta, potatoes, cabbage and cheese! It’s really good. Also a handfull of chocolate chips was consumed as a dessert.

Before swim i had a snack (undocumented) based of some chocolate chip cookies and oj. These cookies to be precise:

Dinner was super late, but really good: I re-heated some of the tomato sauce pasta my family had for dinner and added half a can of beans, plus had a salad with hummus dressing

You can see fumes coming up from the pasta!:D

As I say previously, I went swimming today! I was highly tempted to ditch it, but the forced myself out of the comfort of a hot house and into the cold and foggy streets because I knew I wouldn’t regret it. Apparently part of me was still against it because, i don’t know how, I managed to get lost going there: I got off at the wrong bus stop and then just couldn’t find my way! It was highly embarrassing, because I know the streets around the pool. But I managed to get there, swim for 50 minutes, shower and get out in even foggier streets! Oh, with wet hair 😀 I’m no fan of the hair-dryer!

I was having so much fun taking pictures of myself in the middle of the streets ( no one was around, thankfully ;)) that I practically missed my bus! I had to run to catch it, and the driver was kind enough to wait for me.

And the time has finally come for me to go to bed! Good night to y’all!

It’s that time of the week! And I even managed to take a picture at everything! shocking, I know :).

For a start, breakfast was peanut-butter oats with half a wacky cupcake and a glass of orange juice served in a fancy Shrek glass.

Lunch (yesterday’s dinner left overs) was enjoyed in between classes, cold because the cafeteria microwave is broken 😦

Thankfully, pesto pasta isn’t that bad cold! Along with the pasta I had 2 clementines

Which I also enjoyed, along with a piece of chocolate, as a pre-swim snack (more on the swim tomorrow!).

Finally, dinner was mexican style, my favourite!

In the tortillas went salad, beans, tomatoes and mexican salsa. As you can probably tell, I had some difficulty with closing my wrap, but the messier the better I think!!

And that’s all I had! I’m off to bed because exhausted, see y’all tomorrow!

What I ate Wednesday

And I finally manage to do another one correctly 😀 So let’s get on with it!

Breakfast was a bowl of banana-pb oatmeal plus a square of a dessert I made yesterday; I had to taste-test it again, you see ;). Rest assured I enjoyed more pieces throughout the rest of the day!

Plus a glass of juice not pictured.

Lunch was enjoyed in the fantastic land of college, and was composed of spinach, tomatoes, carrot sticks with hummus, bread and a kiwi..again not pictured, because I decided to take it later on and was too lazy to take my camera out again; sorry for the blurry picture 😀

Dinnah was more bread and hummus with pesto pasta. No picture for that, sorry 😉

The rest of the day (when I wasn’t eating) was enjoyed (sort of) going to class on my oh-not-so-light typical day of 3 different classes, plus taking for a walk this furry dude in the park.

Unfortunately that was my only physical activity for the day: I’ve been having some problems with my back and pain in my tailbone, so running has been checked off my list of to-do things for some time, until it goes away; now I only have ballet class twice a week and I’m feeling the need to find some other form of activity: weight training is pretty much out of the question, I’m not really a fan, so I think I’ll resolve to stretching and yoga.

Any suggestions as to what I could do are much appreciated 😉
