A few months ago I created this recipe on a whim: I had some left over rice and decided to spice it up a bit to make it less boring. this is what came out!
I really like this recipe, it’s super easy and quick yet delicious!
Lemon Cumin Rice
1 cup basmati rice
1 onion, diced
2 garlic cloves, minced
1 tbsp olive oil
2 tsp cumin
2-3 tbsp lemon juice
dash of black pepper
Cook the rice as usual. I like to use basmati rice because it has the perfect taste and consistency..plus it smells so good when it’ cooking!
In a pan, sauté the onion and garlic with the oil on medium for a few minutes until translucent and tender. Add the cumin, mix well, then add the lemon juice.
I used 3 tbsp of lemon juice and liked it, but my sister told me she tought it was a bit too much, so 2 tbsp might be better.
Add the rice, and the dash of pepper, and mix well. And that’s it! Enjoy 😀
And yes, I totally ate my rice with chopsticks the first time I made it 😀
