I’ve always loved bell peppers: raw or in a stir-fry, they’re one of my favourite vegetables.
But recently I discovered the magical land of roasted red bell peppers, and may I say that I now like them even more than before?
Roasting accentuates the incredible sweet taste red bell peppers have, and who doesn’t enjoy taking the pepper’s skin off? 😀
My first experiment with roasted red peppers was with hummus: I loved the result, also because the hummus turned out much more creamy than it usually did.
After this, I was eager to find another recipe that required roasted red bell peppers, so when I saw that Angela was trying to make a pasta sauce out of it, I was immediately hooked and started
fantasizing thinking about how to make a nice and creamy pasta sauce.
I’d already made a tomato sauce that used cashews as a base, so I thought of switching the roasted bell peppers for the tomatoes and see what happened. The result was a bright orange sauce that’s nice and creamy that’s perfect for pasta; some members of my family also had it alone with bread, so you could even use it as a dip!
Creamy Roasted Red Bell Pepper Sauce
Makes enough sauce for 8 servings of pasta!
4 bell peppers, roasted
1 cup cashews
1/2 cup water
2 garlic cloves
1 tbsp olive oil
1/2 tsp salt
1/8 tsp paprika
1/8 tsp black pepper
dash of red pepper
First of all, roast the bell peppers: cut peppers in half and press down with your hand so that the halves lay flat; place the peppers on aluminium foil in the oven and broil on high for 15 minutes, until skin is black.
Wrap the peppers in the foil for 20 minutes, and then remove the skin from the peppers; you may think it impossible, but I assure you the skin comes out easily; and the blacker the skin, the easier it is!
Once you are done peeling the peppers, place them in a blender the cashews, water and blend until smooth.
Meanwhile, in a large skillet sauté the chopped onion and garlic in the olive oil for a few minutes until translucent, then add the sauce.
Cook on low for a few minutes, and add salt, black pepper, paprika and red pepper.
The sauce is ready!
